Moroccan Beef and Prune koftas

Ingredients
  

  • 500 g beef mince
  • 1/2 white onion, grated
  • 2 tsp mixed spice (Hoyt's brand at the supermarket has a great mixed spice blend)
  • 2 tbsp ground flax seeds
  • 4 prunes, finely diced
  • 1 small handful chopped mint
  • 1 small handful chopped parsley
  • 1 tbsp extra virgin olive oil

Equipment

  • 1 large mixing bowl
  • measuring spoons
  • 1 knife
  • 1 chopping board
  • 1 baking tray
  • Baking paper to line the tray

Method
 

  1. Turn oven on and heat to 180 degrees C. Line the baking tray with baking paper.
  2. In the large mixing bowl add all of the ingredients and mix to combine.
  3. Take a small golf ball sized piece of meat mixture and shape into 5cm little kofta logs.
  4. Place the koftas onto the baking tray and place in the oven to bake for 10 minutes. Turn the koftas over at 5 minutes.
  5. Remove from the oven and let cool for a few minutes before serving. These are great to serve with yoghurt as a dip and cucumber/tomato fingers.

Notes

  1. This meal can easily be turned into a combination weaning meal by adding a yoghurt dip. This way your baby can practice hand eye co-ordination by dipping the koftas into the yoghurt.
