Banana oat bran muffins

Have you ever used oat bran in baking before? if you haven't I highly recommend you include it into baking. Oat bran is the outer husk of oat groats where most of the fibre, iron and other minerals are found. Oat bran turns any cookie, muffin or loaf into a soft and fluffy morsel ready to devour. These banana oat bran muffins didn't last longer than an hour in my home, even though I had baked them for lunch boxes! Oat bran is an iron rich source containing 5mg of iron per 100g. It's also high in fibre and is a source of magnesium, phosphorus and potassium. I can definitely say the banana oat bran muffins are approved by the whole family.

Ingredients
  

  • 3 ripe bananas
  • 2 eggs
  • 1/2 cup brown sugar
  • 3/4 cup milk
  • 1/4 cup light olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1 1/4 cup plain flour
  • 1 cup oat bran
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch salt

Equipment

  • 1 mixing bowl
  • 1 set measuring cups
  • 1 set measuring spoons
  • 1 12 hole muffin tray
  • 1 silicone spatula

Method
 

  1. Preheat the oven to 190 degrees C. If you have fan forced - 180 degrees C.
  2. Grease the muffin tray or place in muffin cases.
  3. In a large mixing bowl, mash the bananas with a fork or potato masher until the banana is super mushy.
  4. Add the eggs, and whisk. Add the sugar and stir to combine.
  5. Pour in the milk, apple cider vinegar and oil then stir to combine.
  6. Add in the dry ingredients of flour, oat bran, baking powder, cinnamon and salt and stir to combine.
  7. Pour the muffin mixture into the muffin tray filling to 3/4 of the way up.
  8. Bake in the oven for about 20 minutes or until they "bounce" when you press the top of the muffin. You can also check they are cooked by inserting a skewer into the muffin if the skewer comes out clean.
  9. Remove from the oven and transfer to a cooling rack to cool.
