Method
- Gently boil the chickpeas in a small pot with the bicarb soda for 10 minutes.
- Meanwhile juice the lemon and place the garlic clove in the lemon juice while the chickpeas are boiling.
- Remove and drain the chickpeas then add to a bowl of cold water and scoop out the chickpea skins. Drain the chickpeas again ready to go into the food processor.
- Add all ingredients except the ice cubes to a food processor.
- Blend for 3-4 minutes until mostly smooth.
- Add the ice cubes and blend for another 2 minutes.
- You should have beautiful silky smooth hummus. Garnish with a drizzle of extra virgin olive oil and some parsley or dill.
